simple and delicious tortilla soup
This one is super simple and made with clean ingredients it's not only delicious but good for you!
Double up on the jalapeño if you like it super spicy!
For the soup:
- 1 Tbsp Olive oil
- 1 medium onion, chopped
- 3-4 garlic cloves, chopped
- 1 jalapeño, seeded and finely chopped
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 3 cooked chicken breasts, shredded (I like to bake my chicken in the oven at 350 for 25-30 minutes and then shred in the mixer using the paddle attachment)
- 1 20 oz can crushed tomatoes
- 32 oz chicken bone broth
- 14 oz can of black beans
- 1.5 cups of frozen corn
For the toppings:
- Avocado, sliced
- Cilantro, chopped
- Lime wedge
Method:
- Bake your chicken and shred
- Drizzle a cast iron pot with olive oil. Add your onions and jalapeño and sauté until fragrant, about 5 minutes
- Add your garlic and sauté for about 1.5 minutes
- Add your tomatoes and stir to combine
- Add your bone broth and beans and bring to a boil, then down to a simmer. Simmer for about 25 minutes.
- Add your corn and stir
- Ladle in to bowls and top with cilantro, avocado and lime.
